Vinification: Manual harvest in permeable containers. After transport to the winery, the grapes are peeled and pressed very gently. Each variety is managed and fermented separately at a temperature of 27/28 degrees after a maceration of about 20 days. Refinement takes place in steel tanks for about 6 months and another 6 months in bottle.
